Meat

Most of us will be horrified to see some of the inclusions I have made in the listings of meat products. However, I have included them for historical purposes only!

I personally not condone the eating of blackbirds and robins but in the 1500s the Venetians used to adore Beccafichi, small birds that they imported chiefly from Cyprus. They would come pickled in jars of vinegar and eaten whole once the stomach had been extracted. If you were to research old Italian recipes all these unfortunate species would crop up somewhere.

The other historic recipe calling for birds we don't consider to be food anymore is the Russian Doll roast, a series of deboned birds stuffed inside each other. The lineup for this roast reads as follows, in ascending order: Finch, Ortolan, Lark, Thrush, Quail, Plover, Lapwing, Partridge, Woodcock, Teal, Guinea Fowl, Duck Chicken, Pheasant, Goose, Turkey and Bustard!
